Spring Time Borek; Spring Greens Meet Mediterranean Flaky Pastry

You might have had a delicious feta and spinach pie called Spanakopita in a Greek Restaurant, or Borek in a Turkish cafe.  We love making these delicious flaky pastries at home, using fresh greens from the market.  We added Dandelion greens to the traditional spinach, to give it some extra Spring time oomph.  It takes a bit of getting used to the phyllo and yufka doughs when you start learning how to make these, but once you get the hand of it,  you will be rolling up this Mediterranean pies all the time.

I love the choice of Dandelions~what a nice surprise! I want to try these soon.

This looks like it would be amazing!  I have always wanted to learn how to cook impressive meals such as this, but I only know how to make basic dishes.  I have thought about taking some culinary classes so that I can finally learn how to make amazing meals.  I recently received a direct mail flyer from a local arts school that offers culinary classes and they even have a course dedicated to making Mediterranean dishes.  I think I may try taking a course or two and see how well I like it.  Has anybody here ever been formally trained in the culinary arts?
