Ixchel: Red Goddess Dressing

Ixchel was known as Lady Rainbow to the Mayans, and was consort to the most important deity, Itxamna. She was the goddess of childbirth, medicine, weaving, and sorcery. Cozumel was her sacred island. To invoke her, we made a tangy dressing with avocados, tofu sour cream, lemon, and dried hibiscus flowers. Its color is a fuschia reminiscent of her fiery character.
