Fall Salad with Squash, Pomegranate, and Arugula

This salad is very simple to make and incredibly fulfilling. Butternut squash is roasted and cooled, and then served with arugula and fresh goat cheese. Pomegranate seeds are the final garnish, creating an array of gorgeous colors. If you get a chance, roast the squash ahead of time, and then just put the salad together right before you serve.
