Lillie Tierney, MS, RD, CDE (Dietitian and Certified Diabetes Educator) at St. Francis Hospital and Medical Center in Hartford, CT gave us some recommendations for our recipes. She points out that portion size is crucial for people with diabetes. Limit your portions of carbohydrates, such as this salad, to 1/2 cup to 1 cup at each meal. Whole grains, such as bulgur, are processed by our bodies at a much slower rate, thus reducing sharp spikes in our sugar levels after a meal.
