On the Red Carpet

Enjoy these red-carpet worthy appetizers at your Oscar party this year...

Recipe

1 cup popping corn
1/4 cup olive oil
1/2 tsp smoky paprika
1 lemon
Salt

Mix together the olive oil, paprika, lemon, and salt. If you have an empty spray bottle, fill the bottle with the mixture.
Pop the corn on the stove top by heating up a few kernels in some hot oil in a large pot. Once they pop, add the rest and cover the pot. Shake it a bit as you hear all of the kernels pop. Remove from heat and spray with the olive oil mix.

This lightly spiced popcorn mix is delightful and healthy.

These are as simple as can be. Dates stuffed with almond butter. The ultra-sweet dates are balanced by the thick almond butter, making it a great “movie” date.

x Medjool Dates
1 teaspoon almond butter per date

Get about 1-2 dates per person. Slice a thin slit down the side of the date, lengthwise. Gently open enough to pick out the pit. Use a small spoon to fill the dates with the almond butter. Simple and oh so delicious!

This is a quick-to-put-together pizza using some prepared foods. We like to call this the "Red Carpet" because we roll out the pizza to be long and narrow. You can of course bake it like a regular pizza, but for Oscar Night keep it long. Once it is baked, you can slice it into strips for everyone to pick up.

1 prepared pizza dough from a local pizza parlor or supermarket
½ cup roasted marinated tomatoes (Whole Foods has this in their “antipasti” bar)
1 Tbsp capers
½ tsp. anchovy paste (optional)
1 Tbsp balsamic vinegar
1 ball of smoked mozzarella

Preheat the oven to 400ºF.
Blend the tomatoes, capers, anchovy paste (if using), and vinegar together in a mini blender.
Slice the pizza dough into three separate pieces. Roll out each piece in a long thin strip (hence the “red carpet”). Brush the pieces with olive oil and bake for 20 minutes, or until cooked through. Take out of the oven and spread the roasted tomato sauce over top. Cut up the smoked mozzarella and place small pieces along the red carpet. These are your “smokings”. Slide into the oven again for another 5 minutes or so, or until the cheese melts.

Recipe

These are simple little desserts of salty whole wheat crackers dipped in dark chocolate and topped with an orange segment. They are great munchies for a casual dessert in front of the television.

12 whole wheat crackers (Carrs or Breton brands are best)
1 5.3 ounce bar of bittersweet chocolate
1 navel orange, zested
1 tray or board covered with a piece of plastic wrap or parchment

After you have zested the orange, peel it using a sharp knife, making sure that you remove the white pith. It is easiest to do this by slicing away both ends first and creating a flat surface. Carefully cut out all of the orange segments from the orange, cut each segment in half, and set aside.
Gently melt the chocolate in a small saucepan over low heat. Stir in the orange zest, but be careful not to get any juice in the pan. Once the chocolate has melted dip the crackers into the melted chocolate, one by one, and coat them. Remove and set on the plate covered with the wrap or parchment (this is just so that you can remove them easily once they have set). Place an orange segment half on top of the cracker. Let sit until set and refrigerate.

Makes 12 Oscar Golds

Recipe

This is a really light and loose dressing, perfect for all types of greens or steamed vegetables.

½ ruby red grapefruit
1 lime, juiced
1 jalapeno pepper
1 tsp flax or sesame seeds
1 teaspoon agave nectar or honey
2 tablespoons olive oil
Salt and pepper

Blend all of the ingredients together and season to taste.
Makes about 1/2 cup.

This is a really light and loose dressing, perfect for all types of greens or steamed vegetables.
