Goddess Dressings (Not Just Green)

This week we add three more "goddess" dressings to the mix. We have Ixchel (Red) Goddess Dressing, Sarasvati (Yellow) Goddess Dressing, and Kuan Yin (White) Goddess Dressing. These three dressings are simple concoctions that invoke the goddess within, and taste quite good with veggies.

Ixchel was known as Lady Rainbow to the Mayans, and was consort to the most important deity, Itxamna. She was the goddess of childbirth, medicine, weaving, and sorcery. Cozumel was her sacred island. To invoke her, we made a tangy dressing with avocados, tofu sour cream, lemon, and dried hibiscus flowers. Its color is a fuschia reminiscent of her fiery character.

Sarasvati is our yellow goddess, as she is celebrated in the spring with the color, at the same time of the mustard seed harvest. We made her dressing with a kefir base, and added curry powder, turmeric, and some lemon to the mix. This is a more liquidy dressing, perfect for grated veggies like carrots.

Kuan Yin is our white goddess dressing, embodying the compassion and mercy that she represents. Her light and smooth dressing is made with silken tofu, pickled ginger, miso, and rice vinegar. We like to pour Kuan Yin on just about anything, but especially dark green Asian veggies.
