Botticelli's La Primavera

We celebrate the coming of Spring with Sandro Botticelli's "La Primavera". Our recipes are inspired by the different elements of his painting: Flora and Zephyr Asparagus with Goat Cheese and Tarragon, Dancing Goddess Dumplings in a Spinach and Pea Broth, and Mars May Puddings made of strawberries and mascarpone.

This asparagus recipe is inspired by Zephyr the West wind blowing Chloris across Botticelli's painting and turning her into Flora, goddess of spring. The white asparagus are the three graces dancing. The vinaigrette is made with tarragon and goat cheese and is rich and delicious.

These dumplings are made with whole wheat and pecorino romano cheese, they dance in a spinach and pea broth, surrounded by edible flowers. This recipe is inspired by the green grass, laden with flowers in Botticelli's painting.

These delightful puddings represent Mars, the god associated with this springtime month. We use agar flakes, mascarpone, strawberries and rhubarb to create a soft and supple gelatin.
