Kale: Winter's Miracle Green

Kale is one of our favorite vegetables for the Winter. This sturdy green vegetable is full of Vitamins A and C, as well as fiber, calcium, and iron. It is very low in calories, and very high in nutrients, making it a great choice for people looking to lose weight. While lettuce is great for summer, eat kale while it is in season this Winter. We try all of the varieties (Dinosaur, Curly Leaf, Flowering) in our recipes, and encourage you to do the same.

This Winter we did a demo at the Grand Army Greenmarket in Brooklyn. So many people were excited to try our simplest recipe yet- Kale with Garlic. The biggest surprise of all was the number of kids who kept coming back for seconds and thirds. Kids love kale! Farmers donated bunches of Curly Leaf Kale, which we then sauteed with some olive oil, garlic, and soy sauce. Try this tonight!

Kale can be eaten raw, and is a delicious replacement for Romaine lettuce in the classic Caesar salad. This is a great salad to serve as a first course with fancy lunch, or a main dish for a more casual meal. Use Lacinato (Dinosaur) Kale for this recipe- its texture and shape are more fitting for a salad.

A frittata is an easy meal to make during the week. For people who work, you can make this one night, and then take it to work for lunch the next day. In this recipe we use potatoes and Curly Leaf Kale, along with paprika and Parmesan cheese for some subtle seasoning.
