Kale: Winter's Miracle Green
Kale is one of our favorite vegetables for the Winter. This sturdy green vegetable is full of Vitamins A and C, as well as fiber, calcium, and iron. It is very low in calories, and very high in nutrients, making it a great choice for people looking to lose weight. While lettuce is great for summer, eat kale while it is in season this Winter. We try all of the varieties (Dinosaur, Curly Leaf, Flowering) in our recipes, and encourage you to do the same.
