The Adventures of the Pomegranate

Pomegranates are Kitchen Caravan's favorite fruit. Just like us, they love to travel and find themselves in healthy recipes all around the world. Their seeds have been loaded with symbolic meaning, since Antiquity, when they sealed Persephone's fate of becoming Queen of the Underworld. Today, they are symbols of health and well-being. This fall, enjoy them for their countless health benefits, as well as their culinary versatility.

This salad is very simple to make and incredibly fulfilling. Butternut squash is roasted and cooled, and then served with arugula and fresh goat cheese. Pomegranate seeds are the final garnish, creating an array of gorgeous colors. If you get a chance, roast the squash ahead of time, and then just put the salad together right before you serve.

This salad was born on Halloween in 2004, during midterms of our senior year of college. It is just the right thing to prepare when you need to recuperate from mental and emotional stress. Roasted acorn squash is turned into a pasta sauce flavored slightly with smoky chile chipotle adobo. The dish is garnished with walnuts, pepitas, and pomegranates, providing various textures and flavors that both nourish and delight.

This cake is an easy dessert recipe that does not call for many ingredients and appeals to every sweet tooth. White chocolate is melted and then mixed with Greek yogurt to create a cheesecake-like texture with no baking at all. Pomegranates are the little gems that adorn this opulent dessert that can be whipped up on a whim.
