Diabetes Management

This week we prepare three healthy dishes that are tailored for people who are trying to manage their diabetes, but are great for just about anyone. Diabetes is a major problem affecting the health of the United States, affecting more than 20 million adults, and a growing number of children. There are plenty of ways to take charge of your health through eating right and getting enough exercise. These recipes are just a glance at how easy it is to enjoy food and lower the risk of developing diabetes. Lillie Tierney, MS, RD, CDE (Dietitian and Certified Diabetes Educator) of St. Francis Hospital and Medical Center in Hartford, CT, gave us some tips about our recipes.

COOKING SHOW

Although many doctors recommend low-fat vegan diets, cold water fish, such as halibut, are a good choice for people with diabetes who are not used to meatless diets. Their omega-3 fatty acids have a lot to do with regulating our metabolisms and body weight, which in the end helps our bodies' manage insulin levels. Red pepper sauce is very simple to prepare and can be used on whole wheat pasta dishes as well.

Lillie Tierney, MS, RD, CDE (Dietitian and Certified Diabetes Educator) at St. Francis Hospital and Medical Center in Hartford, CT gave us some recommendations for our recipes. She points out that portion size is crucial for people with diabetes. Limit your portions of carbohydrates, such as this salad, to 1/2 cup to 1 cup at each meal. Whole grains, such as bulgur, are processed by our bodies at a much slower rate, thus reducing sharp spikes in our sugar levels after a meal.

Miso is a wonderfully nutritious ingredient to cook with that serves as a great source of protein. You can find white miso at organic supermarkets, as well as in the Asian section of many conventional supermarkets. Buckwheat soba noodles are a pasta that is made with whole grains, and can be found in the Asian section of conventional supermarkets. Lillie Tierney suggests upping the amount of vegetables in your soup, and keeping the portion of soba noodles to about 1/2 cup.

Getting plenty of exercise goes hand in hand with diabetes management. We met up with Sarina Jain, creator of the Masala Bhangra workout, to learn about how she created a workout based in the Bhangra dances of Punjab, India.
