Coconuts: Taste Yourself Away

Although we encourage people to buy local ingredients, sometimes we all just need to escape. Not only does a coconut taste like the tropics, but its high potassium, vitamin C, and mineral content make it a very healthy ingredient. Enjoy these recipes and the temporary taste bud vacation!

COOKING SHOW

This soup has very few ingredients. In addition to its simplicity, you can serve it either hot or cold, making it suitable for any kind of weather. The curry powder adds a really delicious undertone to the whole soup, and brings the coconut back to its origins in Kerala, Southern India. Ask the produce person where you buy the coconut to slice off the top, and give you the water in a cup. You are only using the water in the soup, so you can always use a hammer and nail at home.


COOKING SHOW

This is a typical dish eaten in Mexico both for pleasure and as a cure for hangovers. It usually combines oysters, scallops, squid, octopus, and shrimp together in a tomato- based cocktail sauce. This version uses fewer fish in a coconut base, but it still has the power to bring someone back to life. Perfect to serve at a cocktail party in the summer!

This is a lovely, thick pudding. It is a good idea to ask someone to open it for you where you buy it, and bring home the water in a cup, and the empty shell to use as a serving dish. Serve it straight from the shell, with plenty of spoons.
