Two-Tone Crown of Beans-Corona de Frijol

This bi-color crown of beans is very easy to make. You flavor the beans with chipotle en adobo, and then dry them out in a pan. The beans are then layered with cheese and baked. The two colors of beans make this an attractive dish to serve for an elegant dinner in the countryside.

Olive oil
1 can black beans
1 can white beans (frijoles bayos o canarios)
¼ can chipotle salsa
150g queso fresco (or mozzarella), cut into thin rectangles, plus some for garnish

Heat up some olive oil in two separate pans. Add the black beans to one pan, and the white beans to the other. Mush with a potato masher until broken up and quite dry.
Add the chipotle to each pan of beans, half and half.
Grease a crown mold with a few drops of oil. Add the white beans to the mold, spreading them out evenly. Add the cheese in one layer on top of the white beans. Follow with the black beans, again spreading them out evenly.
Bake in the oven at 350°F for 20-30 minutes, until the beans are completely heated through.
To serve: carefully flip onto a serving platter large enough to hold the mold and top with freshly crumbled cheese (feta or cotija work well).
Serves 6.
