Simple Aegean Fish with Coffee, Olives, and Lemon
This recipe teaches you how to make a simple marinade for fish. The marinade uses flavors of the Aegean coast: Turkish coffee, olive oil and lemon.
2 fillets black sea bass (or any firm-fleshed white fish)
½ teaspoon lemon zest
1 tablespoon lemon juice
1 tablespoon olive oil
1/8 teaspoon Turkish coffee
1 tablespoon chopped green olives (Sicilian or Cerignola)
Garnish: Lemon juice
Rinse the filets and pat dry.
Combine the lemon zest, lemon juice, olive oil, and coffee together in a small bowl. Stir together, along with a heavy pinch of salt.
Place the filets in a deep dish and pour over the marinade lemon/oil/coffee mixture. Refrigerate for about 30 minutes. Remove from the fridge and season with salt.
Bake the fish in a 375°F oven for 20 minutes, or until cooked through and flaky.
Top with the chopped green olives and a drizzle of lemon juice.
