Halway Ard (Flour Dessert)

Our friend Raz in Sulaimaniyah teaches us how to make this popular Kurdish recipe for new mothers, they say it helps produce breast milk and give energy to the mother. It is really easy to make (even in the dark)!

1 ½ cups sugar
2 cups water
3 cardamom pods
1 cup ghee (clarified butter)
3 cups flour (barley flour best)
Toasted almonds
Cook sugar and water together with the cardamom pods
In a separate pan melt together the ghee and the flour- stir over a medium flame until the flour is cooked and turns a darker brown.
Slowly pour the sugar water into the flour/ghee, stirring constantly until the mixture resembles a thick toffee.
Put into a serving dish and generously top with toasted almonds
