Dried Thyme and Rosemary

Drying herbs is a great way of preserving the freshness of summer. The herbs' flavor becomes much more concentrated in its dried form, requiring you to use less in the recipes. This is a great way of drying herbs with a low moisture content.

1 bunch fresh rosemary
1 bunch fresh thyme
Butchers twine

Pick the herbs in the morning, before it gets too hot. Make sure that they are not wet before you start.
Remove the leaves at the bottom of the herb stems, so as to make room for the string.
Bundle the respective herbs together.
Wrap the butchers twine around the bottom multiple times and secure well, leaving excess string from which to hang the bundle.
Hang the herb bundles in a ventilated area that is free of drafts, for about 1-3 weeks.
You may also cover the herb bundles with paper lunch bags with holes cut in them, but this is optional.

After the herbs have dried, remove the leaves from the branches, and place in an airtight container.
