Breakfast Chia Parfait

 

This delicious breakfast combines a bunch of super foods: chia seeds, lucuma (optional), pomegranates, and chocolate.  This is a very healthy breakfast for active people.  Chia seeds are rich in protein, omega 3 fatty acids, iron, calcium, and antioxidants.  They are highly absorbent, which make them very hydrating for your body, but also really fun to cook with.  Do not be frightened by the ingredients listed here- they are actually not hard to find.  

For the Cashew Milk with Chia

1 cup cashews 

6 cups water 

2 tablespoons lucuma powder (Navitas brand) (can be substituted for Agave nectar or honey)

3 tablespoons chia seeds 

Topping Options: 

Walnuts

Pomegranate seeds

Raw Cacao Nibs

Dried Mulberries 

Fresh berries

Coconut cream 

Sliced bananas 

Papaya 

Make the cashew milk by soaking the cup of cashews in water (no the 6 cups) for 8 hours or overnight.  Drain them of their soaking liquid, and blend with the 6 cups water.  Add the 2 tablespoons of lucuma powder, if using, or the honey or agave.  Depending on the strength of your blender, you will either have a homogenous milk, or you might be left with cashew particles in the milk.  If so, strain the milk to remove the particles and discard the cashew meal.  Making cashew milk is easy!  Transfer to a container or jar, and stir in the chia seeds with a spoon.  Cover and let the chia seeds absorb the milk and thicken.  

To serve, spoon out some of the mixture into a cup and top with any of the suggested toppings.  Enjoy!

Makes about 4 cups of chia parfait base.

Thank you for the post. I am really grateful. I collect different recipes of different cuisines from the whole world. Some days ago I found the whole cookbook on search http://byfiles.com of files. I am a gourmet you know. I don't regret it, neither does my husband. Try yourselves!

I have always loved cashew milk but never tried making it myself because I assumed it would be too difficult.  I'll have to follow your instructions and see how it turns out.  I use to drink it a couple times per week since the building I work in had cashew milk, along with chocolate milk, strawberry milk, etc., in one of its vending machines but the milk vending machine was replaced by a soda machine so I have been without cashew milk for awhile now and I miss it.  I had been searching the internet for days and could not seem to find instructions on how to make it so thank you for posting this.

I've just tried making this dish and it came out a bit weird. Still tasted good though! get the facts
