Blueberry Flax Seed Paste (A Breakfast Spread)

Ground flax seeds are wonderful emulsifiers. This is a simple paste using fresh Summer blueberries, that is great for spreading on whole wheat bread and crackers. This flax seed paste is a great replacement for butter and jam. In addition, you will be eating omega-3s, as flax seeds are the best vegetarian source of these healthy fatty acids.

1 cup fresh blueberries
2 T flax seeds
1 tsp. honey (or according to taste)

Grind the flax seeds to a paste in a coffee grinder.
In a mini blender, blend the blueberries until they turn into a smooth puree.
Add the ground flax seeds and honey and stir well. Keep stored in the refrigerator.

Enjoy as a spread over toast and crackers.

Makes about 1 cup.
