Blueberry Clafoutis
This simple French dessert recipe is from Julia Child's Mastering the Art of French Cooking. We like it because it really highlights the delicious fruits, which are cooked in a light batter that shows them off rather than taking the credit for itself.
3 cups fresh blueberries
1 ¼ cups milk
1/3 cup sugar
3 eggs
1 tablespoon vanilla extract
1/8 teaspoon salt
½ cup flour
Preheat the oven to 350F.
Use a blender to combine everything except for the blueberries.
Pour ¼ inch of the mixture into a 9-inch pie plate.
Place in the oven for 5 or so minutes, or until the bottom has set slightly.
Remove from the oven, spread the blueberries across the dish, and pour over the rest of the batter. Smooth over the top.
Place in the middle of the preheated oven and bake for about 1 hour, or until set. It will puff and brown, and a knife inserted into the middle will come out clean.
Sprinkle the top with powdered sugar before serving.
Serves 6.

This is a delicious dessert to enjoy any time of the year. I really the clafoutis after a nice meal. When it's the summer I like to enjoy it outside on the patio. In the winter I like to eat it in my sunroom so it feels like the summer time.
This really is a super recipe. I tried making it for some of my friends and they all loved it. The key to making it great is to make sure you use fresh blue berries. Don't buy the frozen ones. Eating this will give you the sugar boost you need and even superman stamina to let you stay energized for hours. Remeber everthing must be fresh to have the best quality.
