To put it simply, this recipe could not be easier.
1 ½ cups puffed amaranth
1 bunch cilantro (about 1 ½ cups, loosely packed)
1 T white wine vinegar
2 T olive oil
Salt to taste
Chop the cilantro very finely.
Place the amaranth in a bowl. Squeeze the lime juice directly into the amaranth.
Add the vinegar, salt, and olive oil to taste.
Stir in the chopped cilantro.
Serve with ½ an avocado per person.
