Anchovy, Caper, and Herb Dressing
If you like anchovies and capers, you will love this dressing. It is the perfect salty counterpoint to fresh garden tomatoes and other Summer vegetables.
1 small tin of anchovies, drained of their oil
2 T capers
½ cup loosely packed parsley
¼ cup loosely packed basil
2 T white wine vinegar
3 T olive oil
Juice of half a lemon
Makes enough for a four person salad.
