Coconut "Vuelve a la Vida" Ceviche

This is a typical dish eaten in Mexico both for pleasure and as a cure for hangovers. It usually combines oysters, scallops, squid, octopus, and shrimp together in a tomato- based cocktail sauce. This version uses fewer fish in a coconut base, but it still has the power to bring someone back to life. Perfect to serve at a cocktail party in the summer!
