Narragansett Corn Fritters

These tasty little corn fritters are great as appetizers and shared plates. Fresh corn kernels are simply combined with eggs and cooked into little rounds, then topped with a lemony lima bean spread and smoked trout. They are inspired by the diet of the Narragansett group of the Algonquin tribe of Western Rhode Island, whose diet depended upon cultivating corn, hunting, fishing, and plant gathering.
