Mamaliga is an Eastern European dish of cornmeal boiled in salted water. The cornmeal is cooked into a dense loaf, so that it can be sliced and eaten as a replacement for bread. Typically it is served with sharp cheese and/or sour cream. This dish is a quick and easy way of getting healthy whole grains into your diet. Here we serve it with slowly roasted beets, lightly dressed beet greens, and some sharp sheep milk feta cheese.
