Freekeh - Green Wheat
Freekeh is an ancient grain from the Middle East. It is wheat that is harvested while still young and the grains are green. The wheat is set about in piles, then the burned to remove the chaff. The burnt chaff is then rubbed off, which is what gives freekeh its name, which translates as “rubbed” in Arabic. Because it is a young wheat, the grains are high in protein, and not so starchy yet. They are also rich in fiber, vitamins, and minerals. It is typically made from durum wheat, but can also be made from various other wheat varieties.
